Default Caesar Salad

-Romaine; washed & torn to bite-sized

Dressing

1 1/2 cups extra virgin olive oil
1/2 cup fresh-grated parmesan
4 cloves crushed garlic
1 can anchovies(or paste to taste)
2 egg yolks(coddled egg; actually)
4 tbsp. fresh-squeezed lemon juice
2 tbsp. worcestershire sauce
1 tbsp. dijon mustard
1/2 tsp. each salt & fresh-ground black pepper

blend it and spend it

Sourdough Garlic Croutons

-cube it. Easier with somewhat-stale; cut crust off if preferred, we leave it on
-1/4 cup extra-virgin olive oil in large skillet
-heat, sprinkle to taste with McCormick California Style Coarse Ground Garlic Powder with Parsley

or equivalent, and toss to coat thoroughly
-bake @ 400°F ~~ 10 minutes or until crunchy

He died a few years back! his wife tried to keep their small restuarant open and I actually went in an ordered a Ceasear Salad.

She brought out the Big Stainless Bowl and made the dressing, did forget a few things and then began to mix with ICEBERG lettuce, really was a change. i have heard that she has also died.

most of those places are closed, when I was down there earlier this year a Stand had the name and said they were in BZNS for a lot of years, no salad on the menu.

Hmm. The original Caesar Salad from Caesar Cardini wasn't about egg yolks.

However, Caesar died in Los Angeles in 1956. So, I really doubt that his ghost opened a restaurant in Loreto.

Or, maybe you were correct. I'm thinking of the editor of the Daily Planet in Superman, Perry White, who was often known to exclaim, "Great Caesar's ghost!"

Have lived in Loreto since the mid 80's.
Had many meals at the original Ceasar's here. And then at his "new"place when he moved.
Never heard of any relation to the TJ's establishment.
The story here always was that he had major Hacienda problems, which caused the closing of his restaurants.
Did have the Ceasar's salad in the supposedly original place in TJ. Was good, but not overly impressive. Like Wod, had no idea the inventor was already pushing up sod.

This is exactly the receipe I have been using for 10 yrs. and have received rave reviews. I make it in my blender starting with the egg yokes. Sometimes, I don't know why, the dressing will be so thich , you have to spoon it out. I think the secret is to slowly add the olive oil after blendfing the egg yokes.

Dressing

1 1/2 cups extra virgin olive oil

I ate at Caesar's restaurant in Loreto in the 1973... had the salad and French onion soup.
I think we knew it was just another Caesar, and not the original... still fun to think about. Before I was born, my folks had been to the 'real' Caesar... they used to race horses at Agua Caliente... Those were the days!

I had heard that the original salad was made without Anchovies. Ceasar knew they only belonged on fish hooks....just like Sashimi/Sushi/YUK.

I did eat at the Original Ceasear Hotel in downtown TJ in the mid fifties. I was about 12 yrs old but always remeber them making the dressing at our table and cracking a raw egg into it, yuk I thought, but it tasted good.
