Default Homemade Ham.

Since good quality, deli type ham, corned beef and pastrami are impoosible to find here in Loreto, I've decided to take a crack at making my own. And successfully I may add.
Here a few pics of turning 21 lbs of porkleg into delicious ham.
The $ 600.00 smoker belongs to a friend of mine, who has a place at Cabo Pulmo. Is off grid, which makes this slow smoker pretty much useless.

WOW. I'm impressed. I'm brave in the kitchen but have never attempted smoking meats. Right now I want a ham sandwich on Jewish Rye.

We found a family here in our area that prepares smoked ham, turkey and ribs dinners (feasts) for special events. They are truly spectacular! We already put in our orders for the holidays...
