Anyone have a great receipe for homemade(using dried chile peppers) red enchilada sauce. I have experimented using a combination of both Calif. and New Mexico dried chiles, soaked first in hot water, then put into a blender with chicken stock and a little salt. Sometimes maybe a little sugar also.

Our enchilada sauce we use:
16 oz tomato sauce 2 oz chopped chili peppers (more or less depending on your taste) 1 cup of onions, chopped 1 teaspoon chili powder 2 teaspoons chicken bouillon 1 teaspoon ground cumin 1/4 teaspoon dried oregano 1 clove garlic, minced Combine all the ingredients and puree in a blender. Place in a saucepan and heat over medium heat until heated thoroughly, usually about 5 minutes or so.
