The big mystery to me is what do they do with the rest of the Pig. I have never ben able to find edible pork products here.

It's one thing to say you will be in charge of a committee, it's another to actually run a committee and work with others for the main goal...........really learned a lot about people in the area by being involved in G4N

The stuff in Carson City is fresh in a roll that you twist into links. I usually bring down 6-8 rolls each trip.

They may have Basque Chorizo in Bakersfield, or if you know anyone headed south..................

I have been cooking with fresh chorizo for 50 yrs., however the recipe for chorizo burgers called for cured chorizo which I am un familiar with. Baja Gringo, do you know where to buy it?

In my limited research, I found that what is called cured chorizo mainly comes from Spain. It is hard like peperoni and you slice it. Not sure if this is what the original recipe calls for. I am afraid if I used fresh chorizo and mixed it with raw hamburger and then grilled it, it would not get fully cooked?
