Default My favorite Baja BBQ Salad




Marinated Cucumbers, Onions, and Tomatoes

3 medium cucumbers, peeled and sliced 1/4 inch thick
1 medium onion, sliced and separated into rings
3 medium tomatoes, cut into wedges
1/2 cup vinegar
1/4 cup sugar
1 cup water
2 teaspoons salt
1 teaspoon fresh coarse ground black pepper
1/4 cup oil

Combine ingredients in a large bowl and mix well.
This is KEY - Cover and refrigerate for at least 2 hours before serving.

Sometimes I will add a tablespoon of Italian Dressing Mix for a more zesty taste.

I have added those on occasion but surprising I have found a lot of folks here in our neck of the woods don't seem to care too much for olives in their salad...

Hi Ron, I make that kind of salad often... very refreshing indeed. I cheat with the dressing and use Girard's Olde Venice Italian, however.

edit: NO OLIVES! ;)

Make that type of salad frequently with extra virgin olive oil and some balsamic.

Another favorite

Sliced Roma tomatoes,
sprinkle with garlic salt and a little sugar,
Fresh basil and finish with balsamic and a drizzle of good olive oil.
